Gone are the days of grabbing that box of prepackaged, glucose-fructose laden snacks that used to be in my pantry. Since I quit the rat race of corporate life, I am home all the time and with that I have the time to make our “quick grab” snacks for school, road trips etc.
I am a simple cook, I don’t have the abstract ingredients in my kitchen like some of the beautiful foodies I admire, nor do I have the time to be in the kitchen for hours stirring up some decadent treats (I do aspire to become a total foodie once my littles are more independent though).
So I like simple, easy recipes to whip up those quick grab snacks. If I can put everything in one bowl, mix it up and bake then it’s a win and this is exactly what this banana bread recipe entails.
Chocolate Chip Banana Bread
Easy, one bowl banana bread recipe.
- 3 Ripe Bananas Mashed
- 1/3 cup Butter Melted
- 1/2 cup Sugar
- 1 Egg Whisked
- 1 tsp. Vanilla
- 1 tsp. Baking Soda
- Pinch Salt
- 1 1/2 cup All Purpose Flour
- 1 cup Chocolate Chips
Preheat Oven to 350F
In one bowl, mash bananas
Add all other ingredients (except chocolate chips)
Mix until well incorporated. It's okay if it is lumpy, the bananas will bake down
Hand mix in chocolate chips and place in greased loaf pan
Bake for 50 minutes to 1 hour or until toothpick inserted in middle comes out clean.
Let cool in pan for 5 minutes then transfer to wire rack. Once cool wrap in parchment then tin foil and store for up to 5 days (but it probably won't last that long)
If you wish to omit the chocolate chips, adjust the sugar to 3/4 cup (instead of 1/2 cup).
